The whole issue of starts is a bit overblown

But given different schemes, it’s hard to compare. A minute of being a Wisconsin lineman is much different from a minute at a hurry-up school like Oregon. Maybe number of snaps, but that doesn’t really translate well between styles. As imperfect a measure as it is, number of starts is probably the best proxy for experience out there.
This is what scares me
Not against most of the teams we’re playing, but they’re giving up an average of 30 lbs each to Wisconsin. If we can stop Clay, then I think we’re in great shape this season, but I think that will be the biggest test.

I agree about facing Clay and Co. being a good test for us this year
But fortunately our o-line doesn’t actually have to face their o-line. So I’m not sure how much it matters that our o-linemen are smaller than theirs. And yes, our d-line is even more svelte, but you really don’t want a bunch of 320# d-linemen trying to rush a QB, etc. over the course of a game. That would be rather undesirable.
